Ahrtaler Köksje

The Ahrtaler Köksje is a dry bean variety , in the district of Ahrweiler and space Cologne is grown. In 2013, the international organization for the preservation of traditional foods added the caramel-colored, brown-purple dotted bean variety to its Ark of Taste .

Dried beans, which are not harvested as fresh pods, but whose seeds ripen on the plant and are then harvested and processed in a dry state, have lost their importance as easily preserved food in Germany with the advent of modern cooling and preservation methods and are therefore rarely used today still grown. The Ahrtaler Köksje is therefore now almost exclusively grown in private gardens and is hardly available in the trade as seed or food, because, due to a lack of cultivar approval, rarity varieties such as the Köksje can only be sold as collector's items or ornamental plants, whereby the buyer must undertake to buy the seeds to be used exclusively as a private person and not for commercial purposes. The existence of the variety is endangered, so that the bean was included in the Red List of endangered domestic useful plants in Germany .

The Ahrtaler Köksje is pulled on poles, but does not grow very high. The pods mature on the plant, sometimes until the first frosts at the end of October. The dried beans are then ripened in warehouses or barns and completely dried out. The bean kernels are peeled off immediately before processing. The Köksje with its sweet and savory taste is traditionally made into soups, salads or spreads.

The Ahrtaler Köksje is said to have been brought to the Rhine region by Napoleonic occupation troops. The variety is said to be derived from the French bean variety Cocos de Prague . The name Köksje is probably derived from this. Another explanation derives the name from the small, round coke hat ( melon ), which is also called Köksje in the Rhineland.
