Api (drink)

Api is an Andean hot drink made from corn and is particularly well known in Bolivia . To prepare it, a corn powder is boiled together with cinnamon , cloves , sugar and lemon peel in water while stirring constantly.

Api is sweet, thick and comes in two colors. There are yellow and dark red / purple Api, the so-called "Api moreno", which is obtained from purple corn. Both colors are usually served in one glass at the same time, so that the two colors are layered on top of each other.

Api is served for breakfast and occasionally for dinner. Pastel is often eaten with this (a thin dumpling pocket baked in oil and filled with Andean cheese).
