The assidat zgougou or assida zgougou ( Arabic عصيدة الزقوقو) is a Tunisian dessert . It is prepared for the mouled festival.

It is a sweet cream made with the pine nuts of the Aleppo pine and tastes slightly like resin . The pine nuts - in Tunisia "zgougou" ( Arabic الزقوقو) and not to be confused with the pine nuts of the pine tree (Pinus pinea) - are cleaned and then pressed with water and passed through a very fine sieve.

The thick juice obtained in this way is mixed with wheat flour and, depending on the recipe, with starch . Sometimes condensed milk is also mixed in. Everything is cooked over a low flame with constant stirring. Icing sugar is added until the cream becomes thick and takes on a slightly gray-brownish color.

This cream is poured into a bowl while still warm and covered with a vanilla cream made from milk, starch, sugar and orange blossom extract. Finally, it is served with whole almonds, small candies or with dried fruits or hazelnuts, walnuts, pistachios or the like. decorated.

History and tradition

It is a food that arose out of necessity during a persistent drought at the time of the failed revolution of 1864 and was therefore not valued and was considered a poor food. It only became fashionable as a sweet dessert in the 1970s. According to tradition, the Assidat bowl is exchanged with neighbors and family members, whereby more emphasis is placed on the decoration than on the food itself.
