aura

Aura is a Finnish blue cheese made from cow's milk by the Finnish dairy Valio in the town of Äänekoski . Aura cheese got its name after the Aurajoki river , which flows through Varsinais-Suomi , part of southwest Finland, and flows into the sea near Turku . Aura cheese has been made since 1935. It is matured for six weeks. The normal aura cheese has a fat content of 29 percent.

Aura Gold cheese has also been on the market since the 1980s and has a stronger flavor thanks to storage for twelve weeks. There is also a light version AURA 17 with 17 percent fat.

The cheese is sold as a whole 3.4 kg loaf or in portions (Aura and Aura 17 in blue metal foil, Aura Gold in a plastic box).

Since aura cheese is also used for cooking and baking, it is also available grated in a plastic bag.
