Bear paw (pastry)

Bear paws are fine baked goods in the shape of a bear's paw .

preparation

A dough without flour is made from ground nuts or almonds, stiffly beaten egg whites, sugar , grated dark chocolate or cocoa and spices. Typical spices are cinnamon , clove or lemon peel. The model is moistened before first use and sprinkled with sugar as a separating agent . The dough is rolled into small balls (approx. 2 cm). The dough ball is pressed into the prepared model to give it its characteristic shape. The bear paws are left to dry overnight before baking. After baking, they are partially dipped in liquid chocolate.
