Banku (also: Obenku, Akpele) is a Ghanaian national dish alongside Joloffreis , Fufu and Kelawele . Banku is a dumpling made from leavened flour and served with sauces and stews. It mostly consists of corn flour , but a mixture of corn and cassava flour is also used.

Traditionally, the flour is mixed with water to make a pulp, which is left to stand for a few days, thereby acidifying. This porridge is then boiled and formed into dumplings before serving. For faster preparation, the fermentation of the dough is shortened to a few hours and acidification is achieved by adding vinegar.

Banku is often eaten with spicy sauces and can be prepared well.

Another variant of the banku from West African cuisine is kinkey , but the leavened dough is steamed in the banana leaf.
