Bonnotte (about "the little good" ) is a French variety of potato that is mainly grown on the island of Noirmoutier . The island is characterized by its direct location in the Atlantic south of the Loire estuary and the climate characterized by the Gulf Stream .

These new potatoes are only offered a short time after the 1st Friday in May, the annual production is only around 100 tons. The potato fields with Tang fertilized - one of the special features of this exclusive and high-priced potato. This fertilization gives it a taste of the sea and a certain sweetness. The potato is predominantly waxy, has a yellow skin and yellow flesh.

The variety was introduced to the island between the world wars, but the amount cultivated fell again in the course of mechanization, as it can only be harvested by hand due to its small size and fragility. The latter is also one of the reasons for the high price at the present time, today the variety is only grown on the island.
