Cap Classique

The term Cap Classique or Method Cap Classique was introduced in South Africa in 1992 to denote the local sparkling wine produced using the Champagne method (Champenoise method). Since the name champagne is protected and can only be used for sparkling wine that is grown and pressed in the wine-growing region of Champagne in France (→ viticulture in France ) according to strictly defined rules, a new term has been introduced here. This term for bottle fermentation was based on the French model.
