Carrez clarification

The Carrez clarification is a process in the food chemistry for the removal of sediments from solutions.

Solutions of zinc sulfate or zinc acetate (Carrez II) and yellow blood liquor salt (Carrez I) are poured in equal parts into the solution to be clarified. The resulting precipitate of potassium zinc hexacyanoferrate (II) K 2 Zn 3 [Fe (CN) 6 ] 2 precipitates at the same time colloids and can be filtered off together with them. In contrast, it only adsorbs dyes to a small extent. It is particularly suitable for preparing samples for polarimetry .
