Cashel Blue

Cashel Blue

The Cashel Blue is from Ireland originating cylindrical cheese from cow's milk . It has a moist, crusty rind with gray mold. It is firm when young, with aromas of tarragon and white wine. With increasing age, the character develops into a more mature, spicy aroma. It is available pasteurized and unpasteurized. The Cashel Blue matures in eight to fourteen weeks and contains around 45% fat in the dry matter .

It is named after the Irish town of Cashel in County Tipperary .
