Chaource (cheese)
The Chaource is a French soft cheese made from slightly salted cow's milk, which is produced in Champagne and Burgundy ( Chaource ). The batter of this cheese is very soft. It has a white rind. It is offered in a cylindrical shape with a diameter of nine to twenty centimeters.
The cheese is extremely mild and is one of the cheeses that fall under the Appellation d'Origine Contrôlée . This is to ensure the quality of this type of cheese. The provisions of the Appellation d'Origine Contrôlée also stipulate that the curdling takes place mainly through lactic acid bacteria . The whey is separated out slowly.
