Coopératives

Coopératives is one of the four main approved production categories of the French Appellation d'Origine Protegée (AOP) for cheeses. Unlike the Fermier and Artisanal production categories , the cheese here is made in a single dairy. The milk is supplied by the members of the cooperative. The production volume is correspondingly large.

Cheeses made this way are usually sold all over France.

Another approved production category of the Appellation d'Origine Contrôlée is the Industriel production category .
