Cozonac
Cozonac [ kozonak ] ( Romanian ; Bulgarian козунак / kosunak ) is a sweet cake Bread the Romanian and Bulgarian cuisine .
It is a traditional holiday pastry made in Bulgaria at Easter and in Romania at Christmas, New Year and Easter. It is similar to the Italian panettone , but differs from it in terms of shape and variety.
Kosunak is made from a yeast dough with milk, sugar, eggs, butter and raisins. In Bulgaria, lemon zest is also added to the dough. In Romania, the recipes differ in the different regions: Instead of raisins, rahat , grated orange or lemon peel, hazelnuts or walnuts , vanilla or rum are also added.
A recipe variant with a filling made from ground walnuts is also very common: the dough is rolled out flat, coated with the filling and rolled up into a roulade before baking - in baked bread, the filling can be seen as a spiral when cut.
Cozonac was presented as a Romanian contribution to the cultural initiative " Café d'Europe " of the Institute of the Regions of Europe (IRE) during the Austrian EU Council Presidency 2006.
