Long-life sausage is raw sausage that has been preserved by maturing with lactic acid bacteria , air drying or smoking (also combined) such as Ahle Wurst , Cabanossi , Landjäger , Plockwurst , Salami , Schlackwurst , Walliser Trockenwurst or Zervelatwurst . Long-life sausages can also be kept without refrigeration and are suitable for raw consumption.

In Austria , a strongly seasoned type of scalded sausage that is also hot smoked and air-dried is also known as permanent sausage.
