Plockwurst

Plockwurst is a mostly smoked , seldom air-dried raw sausage made from coarsely stripped beef , fatty pork and bacon . In terms of taste and consistency, it is reminiscent of Zervelatwurst , but, like salami , is made from coarsely ground meat.

In Germany, “plockwurst simple” can also contain meat rich in tendons and up to ten percent binding agent . In the catering and food industry , plockwurst is often used as an inexpensive substitute for salami (e.g. in pizza ).

The Duden suspects the origin of the name Plockwurst either in the Low German Plock  (chopping block) or in the Middle Low German word plock ( Pflock ), which could refer to the elongated shape.
