Monoacetyl and diacetyl tartaric acid esters of mono- and diglycerides of fatty acids and diacetyl tartaric acid glycerides are produced from mono- and diglycerides of fatty acids and mono- or diacetyl tartaric acid and are therefore complex mixtures of several esters .

They are used in the food industry as emulsifiers or as flour treatment agents. Their effect consists in a better distribution of water in the dough, a better gas retention capacity, a better fermentation tolerance and a larger volume of the bread and rolls. Furthermore, sticking of the dough to the metal of the kneading machine is avoided. It is generally approved in the EU as a food additive with the designation E 472e without maximum quantity restriction ( quantum satis ) for foodstuffs. The emulsifier most frequently used as a flour treatment agent is diacetyl tartaric acid ester (DAWE).
