Danube wave

The Donauwelle is a cake made from sponge mixture with sour cherries , butter cream and cocoa . It consists of light and dark dough that is supposed to suggest the waves of the Danube river . Unlike conventional cakes, the Danube Wave is usually baked on a baking tray and served in rectangular pieces.

After preparing the basic dough, first half of it is placed in the mold, then the rest is colored with cocoa powder and poured over it. Then the dough is topped with sour cherries and baked. The wave-like swirls between the different colored doughs are created by pressing in the cherries. On top of that there is a cream based on butter or pudding and the glaze made of couverture or chocolate, which is decorated in waves with a fork. If you cut the cake, the wave-like structure becomes visible on the cut edge. Together with the wave pattern in the chocolate pouring, this justifies the name "Danube Wave", although there is no proven connection for the choice of the Danube river as the name giver.
