Edelfirn

A noble pear is the positive smell or taste of a long-matured white wine or sparkling wine . This age tone is usually caused by oxidation of the wine, i.e. by its contact with atmospheric oxygen. The aromas are reminiscent of those of sherry , fruit notes take a back seat, while resinous or straw notes predominate. Edelfirner white wine or sparkling wine changes its color into a darker golden yellow.

A negative smell or taste is called firn .
