Egg beer

Egg beer is a mixed beer drink, best known in East German cuisine. To make egg beer, beer is heated with sugar, salt and cinnamon bark until the sugar has dissolved. Then whipped eggs and rum are stirred in and served warm or cold.

In Thuringia , egg beer was traditionally drunk by young people on the May tour when they set up the maypole on Whitsun . For example, egg beer used to be drunk at the traditional sword dance in Warburg.
