Norway's Ekte Geitost (also Geitost or Gjetost , German " goat cheese ") is a semi-hard brown cheese made from goat milk . This cheese has a sweet, caramel-like taste and is brown in color. It is not made from cream, but from whey . The whey is boiled down. The milk sugar caramelizes and creates the sweet, caramel-like taste and brown color.

A similar process is used to make Gudbrandsdalsost from cow's milk with a small amount of goat's milk .
