Epimerases

The epimerases are enzymes and belong to the subgroup of isomerases . Epimers often play a role in the structural transformation of organic molecules . Epimers are molecules that differ only in the asymmetric arrangement of the substituents on a carbon atom. Epimerases are thus enzymes that can change the three-dimensional arrangement of the four different substituents on this carbon atom (= stereocenter ).
