Pea coulis

Pea coulis (coulis de pois) is a puree made from green peas without salt or spices ; it can be pureed with a little water . A coulis must be mashed to a smooth mass . It mostly serves as a principle for cream or cream soups (crèmes), but is also used as a side dish .
