A coulis [ Kuli ] ( altfr . Couleis ) is a natural, not spiced and salted, puree of vegetables, fruits and other foods, such as poultry , game and shellfish . Probably the best-known coulis is the tomato coulis (coulis de tomate). Coulis, for example, is the basis of a bisque .

When making a coulis, water can be used for better pureeing of certain foods, for example pea coulis or other foods with little water or a high starch content .
