Florentines (pastries)

Florentine

Florentines are flat, round pastries made from a crispy roasted mass with almonds or nuts. They can also contain candied fruit ( e.g. orange peel , lemon peel ) and honey . The underside is coated with couverture .

According to the German Food Book, Florentines may also contain flour , but not more than 5% of the total mass, minus the chocolate coating. In addition, the guiding principles of the food book envisage only chocolate as a coating, in particular no fat icing containing cocoa . However, the use of fat glaze is legally permitted if it is adequately labeled.

Despite the name, Florentines have no connection with the city of Florence and are unknown in Italy. The recipe probably originated in France. Florentines are a traditional Christmas biscuit in many areas of southern Germany. In this use, the traditional Florentine is about the size of the palm of your hand. Smaller Florentines are called Florentine cookies.
