Food Chemicals Codex
The Food Chemicals Codex ( FCC ) is a collection of approx. 1200 internationally recognized monographs for determining the identity and purity of food additives , such as flavors , colors , flavor enhancers , nutrients and preservatives .
Content of the monographs
The monographs contain - where applicable - the following detailed information:
- Chemical structure
 - Molecular formula
 - Molar mass
 - INS number [International Numbering System of the Codex Alimentarius , the World Health Organization (WHO) and Food and Agriculture Organization (FAO) for food additives]
 - CAS number
 - Usage
 - packaging
 - Storage advice
 - Labeling requirements
 - IR spectrum (mostly used for identity control)
 
In each individual monograph, criteria - mostly also limit values - for determining identity and purity ( specifications ) are given. The respective analytical test procedure is described in detail in the Food Chemicals Codex.
