Sparkling wine

Sparkling wine ( French Vin pétillant , Italian Vino frizzante , in Switzerland Sternli wine ) is a "semi-foaming" wine with a minimum alcohol content of 7  % and with a carbonic acid pressure of between 1 and a maximum of 2.5 bar at 20 ° C  ; at higher pressure (from 3 bar) one speaks of sparkling wine . The carbon dioxide contained is usually added as exogenous carbon dioxide through various impregnation processes , but can also come from the first or second fermentation , if the must or wine has been fermented in the pressure tank ( endogenous carbon dioxide ). Endogenous carbonic acid is also used when the carbonic acid was created during fermentation of grape must into wine and is later added to the product. It is not necessary that it was created in the relevant container itself.

In Germany, wine law is divided between:

  • Sparkling wine with added carbonic acid,

Sparkling wine is not subject to sparkling wine tax in Germany . Sparkling wine should not be confused with sparkling wine in its features . According to this, sparkling wine is subject to sparkling wine tax if the bottle is closed with a sparkling wine stopper and handle or if it has an excess pressure of more than 2.5 bar at 20 ° C.

After a heyday in the 1950s and 1960s, sparkling wine largely went out of fashion in Germany. It has been experiencing its renaissance since the early 1990s, when increasingly Italian sparkling wines ( Prosecco frizzante ) conquered the German market. Since then, significant quantities have been produced again in Germany and are often marketed under the name Secco .
