Poultry shears

Poultry shears

A poultry shears is a scissors with a slightly grooved, long edge. It is used to cut through the bones of poultry such as chickens, ducks or geese. In this respect, it is used in particular as an aid when carving ready-cooked poultry.

The handle of poultry shears is usually long and curved in the shape of a horseshoe; the shape of the handle is reminiscent of a can opener. Therefore, it takes relatively little force to cut through a larger bone. Poultry shears often have a special cutout in the cutting edge (see picture) that is used to break strong bones. Many commercially available scissors can be dismantled into two parts for cleaning and also secured with a lock for safe storage (see picture) .
