The Glarner Kalberwurst is a type of boiled sausage from the Swiss canton of Glarus .

It is white and contains veal , bacon , white bread , chicken eggs and milk .

The Glarner Kalberwurst is usually eaten in a bound onion sauce with mashed potatoes and dried plum compote. It is traditionally served every Sunday in May in the Glarner Landsgemeinde .

The term is protected as a protected geographical indication and as a word mark .
