Glass noodles
Glass noodles are a noodle-like side dish in East Asian cuisine . They are very thin and almost transparent when cooked.
Manufacturing
Glass noodles are only made from starch and water. The starch for glass noodles can come from peas , corn and mung beans . The sticky, sweet-tasting base material is extracted from the kidney-shaped seeds of the mung beans using a dry and wet grinding technique and mixed with water. The Dangmyeon from Korea, also known as glass noodles , is made from sweet potato starch. According to the package, glass noodles made from mung bean starch consist of approx. 88% carbohydrates and 2.5% fiber and contain no salt, no fat and no protein.
Glass noodles are not to be confused with rice noodles (which are rather matt-white) .
preparation
In contrast to other types of noodles, glass noodles are generally not boiled, but soaked in water and fried or added to soups. You can also deep-fry them . The noodle itself is relatively tasteless, but combines easily with other flavors and is therefore usually prepared together with other flavoring ingredients.
