Gluten flour

Gluten flour is an extract from the flour of wheat , barley or rye . To produce it, the starch is removed from the flour by mechanical separation .

Gluten flour is used as a dough additive for bread and rolls to improve the baking properties of the dough. Gluten leads to more dough volume during the baking process and increases the firmness. Gluten flour is also used to make seitan .
