Gosinaki ( Georgian გოზინაყი ) is a sweet made from honey and walnuts and a typical ingredient in Georgian New Year celebrations. It is only offered on the eve of Georgian New Year's Day and Georgian Christmas, which according to the calendar of the Orthodox Church in Georgia is celebrated on January 7th.

Manufacturing

Honey is heated in a pan and then chopped, peeled walnut kernels are added. This mass is stirred with a wooden spoon. During the roasting process, sugar is added in varying amounts depending on the recipe. For example, one Georgian website gives 1 kg of peeled and skinned walnuts, 600 g of honey (light-colored) and 2-3 teaspoons of sugar as ingredients, while another calculates 4 tablespoons of sugar for 500 g of walnuts and 250 g of honey. Finally, the finished, flat-rolled mass is cut into pieces, often diamond-shaped, with a warm knife.
