Gyutan teishoku

Gyūtan ( Japanese 牛 タ ン , German “beef tongue”, with tan as the short form for English tongue ) is a Japanese specialty. It is made from thinly sliced, grilled beef tongue .

Gyūtan's roots go back to Sano Keishirō from Sendai and the year 1948. Originally it was prepared with salt and therefore got the name Tanshio ( タ ン 塩 , "tongue salt"). It has since found widespread use in yakiniku restaurants and is offered with various side dishes accordingly. In the Sendai area, it is common to serve the dish with barley rice and pickles.
