Harz cheese is a regional specialty that is mainly known in the Harz Mountains and the Harz region between Hanover, Braunschweig and Göttingen. This cheese is made from raw milk that is warm from the cow, without any foreign bacterial cultures . It belongs to the group of sweet milk cheeses (also called rennet cheese ).

Since resin cheese is often produced by the farmers themselves, the quality of the cheese varies; its taste also depends on the season and the feed of the cattle.

It is very rarely offered in supermarkets and instead sold through the market or in the yard. The reason for this is that this cheese, as a natural dairy product, needs care even after its completion.

Differentiation from Harz cheese

Harz cheese is often confused with the widespread Harz cheese , from which it differs fundamentally, however ( Harz cheese is a sweet milk cheese, Harz cheese is a sour milk cheese ). In contrast to Harz cheese, Harz cheese is often simply called "Harzer" in the regions mentioned, which also contributes to confusion.
