Hefner

Hefner is a professional designation in medieval and early modern brewing .

Hefner's job was to ensure that the brewers were constantly supplied with yeast . They also processed the yeast residue and the smooth water . From the smooth water, the Hefners made a thin beer called Hefezaugel . The production of vinegar was also one of the tasks of the Hefner.

In Nuremberg , Hefnersplatz is a reminder of the profession that died out in the 19th century.
