The Hehner number is a fat index and describes the proportion of insoluble fatty acids .

history

Otto Hehner (1853–1924) originally only proposed this for butterfat , as this would receive a Hehner number below 90 as one of the few exceptions. (All other fats and fatty oils have a Hehner number between 90 and 100.)
