Hiroshimana

Hiroshimana ( Japanese 広 島 菜 ) is a delicacy ( chinmi ) in Japanese cuisine . It is a variety of Chinese cabbage ( Brassica rapa subvar. Hiroshimana ). The name is derived from the Japanese prefecture Hiroshima , where the cabbage is grown.

The young leaves and flat stems are very tender and tasty. They are used for stir-frying or, pickled ( tsukemono ), as a starter. In a mild climate, the plants can be harvested 30–40 days after sowing. In Europe, one kilogram fresh costs around € 100.
