In order to help the hops grow more vigorously, all but three main shoots are removed in spring. These then carry the hop umbels required for the production of beer in autumn .

The asparagus hops produced by this work used to be prepared for a simple meal. Because of the increasing mass production it was almost forgotten. For some years now, more hop growers have been marketing the sprouts as a delicacy. The harvest time for one kilogram is around one to two hours, depending on the weather and the condition of the soil.

The short growing season from around mid-March to the beginning of April and the laborious harvest make this extraordinary vegetable an expensive rarity. The vegetables can be prepared in many ways and are suitable for salads and side dishes in hot and cold dishes.
