Hujiao bing , orthographically correct Hujiaobing ( Chinese  胡椒 餅  /  胡椒 饼 , Pinyin hújiāobǐng  - "pepper dumpling"), are a type of baked and filled, roll-like dumplings that come from the Chinese city of Fuzhou . The filled dumplings are very popular in southern China and Taiwan, and they can be bought at night markets or street stalls across Taiwan. There are many variations of Hujiao bing. The usual ingredients are flour, water and raising agent for the outer shell of the dough, while the filling consists of meat (usually pork or beef), sugar, soy sauce, white pepper or black pepper and shallots.

origin

It is widely believed that the pepper bags come from the city of Fuzhou, across from Taiwan on mainland China. The spread in Taiwan is explained by a large number of street vendors with family roots in Fuzhou.

preparation

First, flour, water and leavening agents such as yeast or baking powder are mixed into a dough and then rolled into a thin, circular flat cake, similar to a naan . Then you mix the chopped shallots with meat (mostly pork belly ) and a lot of pepper. This will fill the dough pieces. Then sprinkle sugar and sesame seeds on the dumplings. Later the bags are glued to the inner wall of a cylindrical furnace. The bottom of the stove is heated with firewood. A good dozen hujiao bing are glued to the top of the oven and then covered. A few minutes later you take the dumplings out of the oven with tongs.
