Ikejime

Ikejime , also Ike Jime ( Japanese 活 け 締 め ), is a method of paralyzing or killing fish so as not to impair the quality of the meat. The technique was originally invented in Japan. A knife, sharpened screwdriver, or sharp tool is inserted into the rhombencephalon , causing immediate brain death . This prevents the adenosine triphosphate from reaching the muscles, which would otherwise make them acidic. If done correctly, it will destroy the spinal cord and prevent the fish from acting reflexively .
