The involtini alla siciliana are a typical main course of Sicilian cuisine . Involtino is the Italian word for roulade .

In the basic recipe, thin veal slices are used for the roulades . For the filling, a thick bechamel sauce is enriched with ham and cheese cubes, pine nuts and breadcrumbs and seasoned with bay leaves. The veal slices are briefly fried in olive oil, coated with the bechamel sauce and rolled up. Then they are covered with grated cheese and toasted breadcrumbs and baked in the oven.

Depending on the region, swordfish or aubergine slices are also used instead of veal . Involtini alla siciliana are usually served with salad and fresh bread.
