Pasta with melanzane

Pasta con le melanzane is a typical pasta dish in Sicilian cuisine . As with Pasta alla Norma , aubergines (Italian: melanzane) are the main ingredient in the sauce. They are diced and fried in olive oil with garlic .

Then peeled, chopped peppers and tomatoes as well as olives and capers are stirred in and cooked. Anchovy fillets can also be added if desired.

The hot sauce is best poured over spaghetti or bucatini and sprinkled with fresh basil and grated pecorino siciliano . Fresh bread is served with it.
