Jurassic is a hard cheese made from raw cow's milk from the French High Jura . The loaves mature in rock cellars for at least eight months. If stored in a cool place (6–8 ° C) and wrapped in a damp cloth, the Jurassic will last a long time. It has only a few, small openings in the cheese dough and a very fruity taste. As before, the bark is washed off twice a week with salt water (according to an old house recipe).
