Grès des Vosges

The Grès des Vosges is a soft cheese with washed rind from Alsace . The care and maturation takes place in the Alsatian vineyard in Beblenheim and takes three weeks. During this time it is washed / refined with salt water and finally with pure kirsch.

On the rind of the cheese is a fern leaf as an ornament. The cheese has a very fine, hearty and fruity taste. Its bark is smooth and pliable.

The word grès is French and means sandstone. Also in the lithology , there is the concept of "grès des Vosges"; that sandstone was also used for the facade of the Strasbourg cathedral .
