Kintsuba
Kintsuba ( Japanese き ん つ ば ) is a Japanese sweet made from flour and red bean must or sweet potato puree. It was invented in Kyoto in the middle of the Edo period .
Because of the silver color, the pastry was originally called "Gintsuba" ( gin = silver ). For commercial reasons, however, it was renamed "Kintsuba" ( Kin = gold ) because it was expected to generate higher sales. A “ tsuba ” is the guard blade of the katana ; the name of the kintsuba refers to the mostly round or square shape.
