Garlic soup is traditional in the kitchens of many countries and is prepared in many different ways; a lot of garlic is added to this soup .

In German language written references from the 17th century are preserved: Brühlin of knobloch 1616 is mentioned in the dictionary "Teutsche language and whiteness" Süpplein with garlic to cook is 1662 recommended as a medical remedy for snake bites, and Knoblochsuppe is in the lexicon of Kaspar Stieler stated from 1691. Garlic was a much-described folk remedy, e.g. B. the garlic water described in 1556, but the garlic soup was also listed among soups still known today in a study by Michael Pexenfelder from 1687.

An early recipe for making garlic soup can be found in a Nuremberg cookbook from 1734. In Austria, the consumption of a good garlic soup is advised in the description of the plague and infection regulation of 1713.

The general assessment criteria of the "Guideline for the Assessment of Soups and Sauces" show that soups, the names of which refer to certain ingredients, contain them in sufficient sensory and commercially available quantities. France

Aigo boulido

Aigo boulido (French eau bouillie ; German: boiled water) is a Provencal water soup that is bound with sago , but otherwise made exclusively from garlic and sage leaves.

Austria

The Austrian cuisine knows different types of Knoflsuppe (garlic soup); it comes on the table as a simple stewed soup, made from chicken or beef soup with vegetables and croutons, or prepared as a garlic cream soup.

Spain

Sopa de ajo

In Spanish and Balearic cuisine, sopa de ajo is a traditional garlic soup with a poached egg in chicken broth with lots of garlic and sherry. Sopa ajo blanco or short ajo blanco is an almond soup with lots of garlic.

Czech Republic

česnečka

In Czech cuisine , garlic soup is called česnečka or oukrop (oukrop means hot water). It is made with potatoes and / or bread, sometimes cheese, ham or eggs, and eaten with toasted bread.

Poland

In Poland there is a garlic soup called zupa czosnkowa or zupa postna na gwoździu.
