Lancashire cheese

Lancashire is a firm cow's milk cheese from England with a hard, thin, naturally golden rind. It takes its name from the English county of Lancashire . Young, only a few weeks old, it is also known as "Creamy Lancashire". In this state it is of a moist, crumbly consistency. With maturation for up to a year, the aroma intensifies and it becomes firmer; it is then also referred to as "Tasty Lancashire". Mass-produced Lancashire has a mild, flat flavor. In contrast, the “Farmhouse Lancashire” has a full flavor. The cheese contains approx. 45% fat in the dry matter .
