Lemon curd [ ˈlemən kɜːd ] ("lemon cream ") is a cream that is particularly widespread in Great Britain and North America and is made from eggs , sugar , butter and lemons or as lime curd with limes . The mass has a pudding-like, creamy texture. The cream gets its particularly intense aroma from the fact that both the juice and the zest of citrus fruits are used.

Like jam , lemon curd is one of the traditional English spreads . As such, it is classically served with toasted bread or scones for afternoon tea . It is also traditionally used as a filling for cakes, such as Lemon Meringue Pie , a flat cake made from lemon curd with a meringue topping . In more modern versions, lemon curd is also used as a filling or topping for cupcakes , muffins , etc.

Commercially available finished products can have an ingredient list that differs significantly from the “classic” composition mentioned above; In addition to table sugar, it can also contain corn syrup (“glucose-fructose syrup”) and instead of butter, margarine with a proportion of palm oil .
