Lucca eyes (pastries)

Lucca eyes are ring-shaped pieces of cake made of incendiary material ( spray cake ) with a filling and glaze . They are named after the singer Pauline Lucca .

The donuts are horizontally cut and filled according to the recipe with a sweet cream and coated with a caramel icing or sour cherries and cherry brandy flavored cream filled, the lid aprikotiert and in fondant immersed (melting glaze).
