Abbaye du Mont des Cats

The Mont des Cats is a cheese made in north-western France in the Nord-Pas-de-Calais region . It is one of the so-called Artisanal cheeses, where the manufacturer produces the cheese in his own dairy, but the milk is bought from nearby farms.

A mature loaf of Mont des Cats weighs two kilograms; the diameter of the cheese wheel is 25 centimeters and four centimeters high. The fat content in the dry matter is 45 to 50 percent. The cheese is stored for at least a month to mature. During this time it is washed regularly with brine .

The first producers of this cheese were monks of the Trappist monastery of Mont des Cats (Flemish: Abdij op de Katsberg ) near the northern French community of Godewaersvelde . The cheese has been made since 1890.
