Olomouc Quargel

The Olomouc cheese (: Czech Olomoucký Tvarůžek, or Olomoucký syreček - but is more common the majority: Olomoucké tvarůžky even Olomoucké syrečky ) is a sour milk cheese with red smear , allegedly in the 15th century in the area around the Moravian city of Olomouc ( Olomouc made) and is considered to be the only originally Czech cheese.

Quarels according to this recipe are also made in Austria .

Quargel is made from cow's milk and matures in 24 to 26 hours. It has a slightly sour, piquant to strong aroma and a distinctive smell that is similar to German Harz cheese .

Original Olomouc as well as Saxon or Austrian quarels have been known for centuries and were also known under the Czech name in the 20th century, where they are now made in Loštice in Okres Šumperk . In Germany and Austria, quarels were still produced and sold by some cheese dairies for a long time under the designation of origin Olomouc quarels .

Since August 4, 2010, Olomouc Quargel has been an EU-protected term of origin and since August 2015 may only be used for cheese made in the Czech Republic.
